Puff pastry mini pizzas with tomato, super easy and quick to prepare for the delight of all ages.
We made cloud-shaped mini pizzas, but you can easily make them in the classic round version, and if you like, you can add slices of black or green olives or other ingredients according to your taste.
Mini pizzas are perfect for buffets or birthday parties or simply to serve with an aperitif or for a special snack for your children.

Ingredients for Puff Pastry Mini Pizzas with Tomato:
- 1 sheet rectangular puff pastry
- 5 tablespoons tomato purée
- 1 tablespoon extra virgin olive oil
- to taste fine salt
- to taste dried oregano
- to taste grated Parmesan cheese (optional)

Steps for Preparing and Baking Puff Pastry Mini Pizzas with Tomato:
Unroll a sheet of puff pastry and use a cookie cutter (we used a cloud-shaped one of 2.75 inches but you can use a round one too) to cut out the dough and place the pastries on a baking tray lined with parchment paper.
The leftover dough from the various cuttings can be re-rolled, flattened with a rolling pin into a thin sheet, and make more mini pizzas (we made 20 mini pizzas).
Prick the puff pastry with a fork to prevent it from puffing up too much during baking.
In a bowl, place the tomato purée (choose a fairly thick one), add a tablespoon of oil and some salt, and mix well.
On each mini pizza, place the tomato purée, some dried oregano, and, if desired, some grated Parmesan cheese.
Bake in a preheated oven at 392°F for 15 minutes, they should be nicely golden.
Serve the mini pizzas hot or at room temperature according to your taste.
If you prepare them in advance, you can heat them up in a hot oven for a few minutes to regain their crunchiness.
