Pumpkin Cookies in Air Fryer or Oven, Butter-Free Recipe

The pumpkin cookies in air fryer or oven without butter are delicious cookies perfect for accompanying a cup of tea or coffee on cool autumn days or they can become a great snack to take to work or school. To make these cookies, you don’t need to be an expert baker: just combine a few genuine ingredients that you probably already have in your pantry: flour, baking powder, granulated sugar, eggs, and, of course, pumpkin, combine to create an easy-to-work dough. Vegetable oil replaces butter, keeping the cookies soft and light. They’re also perfect for those following a low-fat diet or for those looking for a lighter alternative to classic butter cookies.

Ingredients for the pumpkin cookies in air fryer or oven:

  • 5.3 oz steamed pumpkin
  • 1 medium egg (at room temperature)
  • 1/4 cup granulated sugar
  • 3.5 tbsp vegetable oil
  • 1.8 cups all-purpose flour
  • 1/2 packet baking powder
  • 1/3 cup powdered sugar

Steps for preparing and baking the pumpkin cookies.

  • Take the steamed pumpkin (we cooked it in the electric pressure cooker), let it cool and mash it well with a fork, alternatively, you can also blend it.

    Add a medium egg and the granulated sugar to the pumpkin and stir the ingredients well with a spoon to combine them well.

    Then add the vegetable oil and continue stirring.

    Sift the flour and add it (keep a couple of tablespoons aside), then also add the baking powder and stir well to obtain a homogeneous mixture, if you find it still too soft, add the reserved flour. We used it all.

  • Put the powdered sugar in a bowl or plate.

    Wet your hands well, take some dough, make a ball, roll the top part in powdered sugar.

  • For oven baking: place the cookies on a non-stick baking tray, follow the same procedure with all the available dough, we made fairly large cookies and got 12, alternatively, you can also make smaller cookies. Sprinkle more powdered sugar on the pumpkin cookies to be baked and then bake in a preheated oven at 392°F for about 15 minutes, until golden.

  • For air fryer cooking: form the cookies, roll them in powdered sugar, and then place them in a tray that fits well in the air fryer, sprinkle them with powdered sugar and cook at 347°F for about 10 minutes, check the cooking at the end, they should be golden. If you have a 4-liter air fryer like ours, you need to do multiple batches. We made these cookies in the air fryer more “chubby”.

  • Once cooked, let them cool and sprinkle them with more powdered sugar.

Tips:

If you love spicy flavors, you can also add a sprinkle of cinnamon, ginger, and nutmeg.
