Ricciarelli cooked in the air fryer

Ricciarelli cooked in the air fryer, delicious traditional Christmas treats from Siena made with almonds, lots of sugar, and egg white.

Ricciarelli are perfect to end the Holiday meal, served with a small glass of Vin Santo or another liqueur wine.

The recipe is by grandma Silvi, who delights us every day on Facebook and Instagram with her creations directly from the family patisserie.

For cooking with the fryer, we used our new air fryer Moulinex Easy Fry & Grill, a digital oil-free fryer with electric grill.

Ingredients for ricciarelli cooked in the air fryer:

  • 0.5 oz water
  • 2 tbsp sugar
  • 2 cups almond flour
  • 1 cup powdered sugar
  • 4 tbsp granulated sugar
  • 1 tsp baking powder (level)
  • 2 ground bitter almonds (optional)
  • 1 egg white (large)
  • to taste powdered sugar

Steps for the preparation and cooking of ricciarelli in the air fryer:

  • In a saucepan, put the water and granulated sugar, place it on low heat and let the sugar dissolve well. Once dissolved, turn off the stove and let it cool slightly (the sugar just needs to dissolve, it doesn’t need to reach a boil).

  • In a large bowl, put the almond flour, we also added 2 ground bitter almonds to add more flavor to the treats, then combine the granulated sugar, powdered sugar, and sifted baking powder, mix well with a spoon then add the egg white (from a large egg) and the now cooled syrup, mix well and when the ingredients start to blend together, move the mixture onto a countertop dusted with powdered sugar.

    Work the mixture well (if it turns out too hard, add a tablespoon of water), form a roll about 10 inches long.

    Divide the roll into 15 pieces, then roll the dough pieces in powdered sugar on both sides and then give them the classic oval shape of ricciarelli and generously dust with powdered sugar.

  • In the air fryer, place the grill and set 5 ricciarelli on it, then close the drawer and cook at 320°F for 8 minutes with the fry program, then after the time is up, open the drawer and check that they are golden, otherwise continue cooking for another 2 minutes.

    Cook all ricciarelli, place them on a plate and dust with more powdered sugar if desired.

    Store ricciarelli in an airtight container if you don’t consume them all, this way they will remain dry as freshly made.

Advice:

You can also add grated orange zest to the preparation, or bitter almond aroma.
