Ingredients for the roast rack with potatoes:
- 1 pork rack (about 3.3 lbs (1.5 kg))
- 1 cup dry white wine
- 2 tablespoons extra virgin olive oil
- 1 clove garlic
- 1 sprig rosemary
- 6 potatoes

Preparation of the oven-baked roast rack with potatoes:
Peel the potatoes, wash and dry them well, cut them into pieces of the same size, this way you will achieve even cooking.
In a baking dish, place the oil, garlic clove, and rosemary sprig, add the prepared potatoes, and place the pork rack on top.
Season with salt and pepper and add the dry white wine.
Bake in a preheated oven at 340°F (170°C) for about 80 minutes.
At halfway through the cooking, turn the potatoes, and with a spoon, baste the rack with the sauce that has formed to flavor it well.
Once cooked, transfer the pork rack with potatoes to a serving dish and serve immediately.
If during cooking the pork rack seems to dry out, cover it with a sheet of aluminum foil; this way, it will remain nice and tender.
