Saints’ bread in air fryer or oven, a Tuscan leavened recipe characteristic of the Day of the Dead and All Saints, but can be found in Tuscan bakeries and pastry shops throughout much of the year.
For cooking, you can choose whether to use the air fryer or the traditional oven, we have tried both cooking methods and the result was satisfying in both cases.

Ingredients for Saints’ Bread in Air Fryer or Oven:
- 2 3/4 cups all-purpose flour
- 2 tsp dry yeast
- 2/3 cup lukewarm water
- 2 tbsp granulated sugar
- 1/2 tsp black pepper
- 1 pinch fine salt
- 5 1/4 oz coarsely chopped walnuts
- 8 3/4 oz raisins
- 2 tbsp extra virgin olive oil
- 1 medium egg yolk

Steps for Preparing and Cooking Saints’ Bread in Air Fryer or Oven:
In a bowl, put the raisins, add slightly lukewarm water and let them sit for about 10 minutes to soften.
In another bowl, put the lukewarm water, add the dry yeast and stir well to dissolve the yeast.
Take a large bowl, add the sifted flour, sugar, black pepper, and a pinch of salt, stir well, then add the well-drained raisins and the coarsely chopped walnuts, stir to mix well, then add the extra virgin olive oil and the previously prepared yeast.
Mix the ingredients first with a spoon, then by hand, and finally put the dough on a worktop, kneading it well, form it into a loaf, and place it in a bowl, let it rise for 2/3 hours until it doubles.
After the time has passed, divide the dough into two parts and form two loaves, place them on two trays, make an incision on the surface of the bread and let them rise again for about 30 minutes.
In a bowl, beat an egg yolk and then brush it over the bread.
For cooking:
AIR FRYER COOKING: Preheat the air fryer and cook at 320°F for 28 minutes.
OVEN COOKING: In a preheated oven at 356°F for 30/35 minutes.
Once cooked, let them cool well before consuming.
