Savory biscuits with rosemary and paprika in air fryer

Savory biscuits with rosemary and paprika in an air fryer are a simple, quick, and irresistible snack, perfect to serve as an appetizer, for a homemade aperitif, or as an accompaniment to cheeses and cured meats. The combination of rosemary, with its fresh and aromatic scent, and paprika, which gives color and a delicately spicy taste, makes these rustic biscuits ideal for any occasion, even during the Christmas holidays.
The cooking in the air fryer makes them practical and light, with a uniform and crispy golden finish in a few minutes, without having to turn on the oven. You can prepare them in two versions: thin and crunchy, similar to small crackers, or slightly thicker for a more biscuity and fragrant result. Moreover, the traditional recipe’s lard can be easily replaced with butter or oil, to adapt them to everyone’s tastes and needs.
If you’re looking for a tasty idea to bring to the table, these savory biscuits will win everyone over and become a preparation to make often, both for their simplicity and their genuine and aromatic flavor.

  • 1 Rolling pin
  • 1 Cutting board
  • 1 Pastry cutter diameter 2 inches
  • 1 Air fryer Cecotec

Steps for preparing and cooking savory biscuits with rosemary and paprika in air fryer:

  • In a bowl, combine the sifted flour, salt, rosemary, and paprika and mix well.

(alternatively, you can add other spices to your liking).

  • Add the cold lard in pieces and work it with your fingertips until you get a crumbly mixture.

    * If you don’t want to use lard, you can use:

    – 50 grams of cold butter in cubes: the biscuits will still be crumbly

    – 35/40 ml of extra virgin olive oil: for a lighter version, with a more intense flavor or the same quantity of olive oil for a less intense flavor.

    – 40 ml of seed oil: for a neutral flavor, ideal if you want to enhance the flavor of the spices more.

Pour the water little by little and knead quickly, just enough to obtain a soft and compact dough.

  • Transfer the dough to a lightly floured board and with the rolling pin roll out the dough:

    – for crunchy biscuits like crackers, a thickness of 1/8 inch and prick them with a fork

    – for more rustic biscuits, a thickness of 1/4 inch without pricking them (we made this thickness).

With a 2-inch pastry cutter, cut out biscuits, gather the dough scraps, knead them quickly and roll out again to make more biscuits, until the dough is finished.

Place the biscuits directly on the grid of the air fryer (20 biscuits) and cook at 356°F for 10 minutes, if you have a fryer with a single resistance check the cooking on the bottom if they are not yet well cooked turn them and continue cooking for 2 minutes.

Let them cool on a wire rack before serving.

  • Oven baking:

Place the savory biscuits in a non-stick baking tray and bake at 356°F for 12/15 minutes in a static oven, until they are golden brown.

FAQ (Questions and Answers)

  • Can they be prepared in advance?

Of course! You can store them in an airtight jar or a tin box for 3–4 days. They remain crispy and ready to serve.

  • What can I pair them with?

They are perfect with creamy cheeses, cured meats, olives, or as a snack to munch on during an aperitif. Also great to serve at Christmas parties for a spicy touch.

  • Can I freeze the savory biscuits?

Yes, it is possible to freeze them both raw (after forming them) and already cooked. In the first case, just cook them directly from frozen by extending the cooking time by 2–3 minutes; in the second case, just reheat them in the air fryer for a few minutes at 320°F.

  • What other spices can I use for savory biscuits?

In addition to rosemary and paprika, you can customize your biscuits with many other herbs and spices:
Oregano, thyme, or sage for a more Mediterranean and fragrant taste.
Curry, turmeric, or black pepper for a spicy and bold touch.
Sesame seeds, poppy seeds, or a mix of Provencal herbs to add crunch and variety.
You can also divide the dough into several parts and use different spices to get a mixed tray perfect for aperitifs or party buffets.
