The savory lentils in a pressure cooker are a more flavorful alternative to pressure cooker lentils. In this recipe, vegetables, herbs, and vegetable broth are added.
Savory lentils are perfect as a base for many preparations or to be enjoyed on their own. The little tomato paste makes the preparation even more flavorful.

Ingredients for savory lentils in pressure cooker:
- 9 oz dried lentils (we used the small ones)
- 3 tbsp tomato paste
- 3 tbsp extra virgin olive oil
- 1 stalk of celery
- 1 small onion
- 1 carrot
- 1 sprig fresh rosemary
- 1 sprig sage
- as needed vegetable broth
- as needed fine salt
- as needed black pepper

Steps for preparing and cooking savory lentils in pressure cooker:
In a large bowl, place the lentils, cover them with cold water, and let them soak overnight, then rinse them well.
For this recipe, we used the small ones, but we soaked them anyway, even though the package didn’t specify if they needed soaking or not.
Peel the carrot, the onion, and wash the celery stalk well, removing the strings. Cut all the vegetables into small cubes and place them in the pressure cooker.
Add the extra virgin olive oil, sage, and rosemary, and cook the vegetables for 5 minutes until they are well wilted. Then add the lentils, tomato paste, and mix well.
Cover the lentils with the vegetable broth. It should be two fingers above the level of the lentils. Salt and pepper well.
Close the pressure cooker, check that the valve is closed, and bring the pot to pressure over medium heat. Once it reaches pressure, lower the gas and cook for 10 minutes for small lentils and 15 for regular ones.
After the time has elapsed, turn off the gas, let it rest for 1 minute, then slowly turn the valve to release the steam, remove the lid, and stir well.
Your lentils are ready. You can drain the lentils from the little liquid that remains or use them with the liquid for your soups.

The procedure is the same. Just set the SAUTE program when you need to cook the vegetables, then the PRESSURE COOKING program for cooking. The quantities and cooking times are the same as for the pressure cooker.
