Shortcrust cookies rolled in an air fryer, delightful treats perfect for ending the meal sweetly or for snacking during the day.
We filled the cookies half with hazelnut cream and half with apricot jam, you can use the filling you prefer, even pistachio cream.

Ingredients for Shortcrust Cookies Rolled in Air Fryer:
- 1 3/4 cups all-purpose flour
- 1 cup powdered sugar
- 1/2 cup cold butter
- 1 large egg
- 1 pinch fine salt
- 1 tsp baking powder (tip of the teaspoon)
- to taste hazelnut cream
- to taste apricot jam (or other flavors)
- to taste powdered sugar

Steps for Preparing and Cooking Shortcrust Cookies Rolled in Air Fryer:
In a large bowl, place the cold butter cut into cubes and the flour and start working the two ingredients with your hands to obtain a sort of sand (called sanding). Then add the egg, the powdered sugar, a pinch of salt, and the baking powder, and quickly work the ingredients so as not to heat the dough too much. Form a dough ball, cover it with plastic wrap, and refrigerate for 1 hour.
If you like, you can flavor the dough with grated lemon or orange zest or vanilla.
After the time has passed, divide the dough into 2 parts, take one piece, place it on a sheet of parchment paper, and roll it out into a thin sheet, giving it a rectangular shape
Spread the jam flavor of your choice over the entire surface of the rectangle, leaving 1/2 inch around the perimeter.
Roll the dough using the parchment paper as an aid.
Repeat the same process with the other piece of dough (we used hazelnut cream for this piece).
Preheat the air fryer for 2 minutes at 356°F (180°C), then cut the prepared rolls to fit the air fryer size and place them on the rack (you will need to make two or more batches), with the smooth side facing up, cook at 320°F (160°C) for about 15 minutes, until golden and well dried.
Remove them from the air fryer and let them cool slightly, then cut them into pieces about 1 inch (2-3 centimeters).
Let them cool completely and sprinkle with powdered sugar.
TRADITIONAL OVEN COOKING:
Bake in a preheated oven at 356°F (180°C) for about 15 minutes.
Advice:
Powdered sugar makes shortcrust pastry smoother and crispier.
