Ingredients for Shortcrust Cream Ravioli in Air Fryer:

  • 1 medium egg (room temperature)
  • 2 cups cups all-purpose flour
  • 1 pinch baking powder
  • 3.5 tbsps butter (cold from the fridge)
  • 3.5 tbsps whole milk
  • 1 pinch fine salt
  • 7 oz oz custard cream
  • as needed lemon zest
  • as needed powdered sugar

Steps for Shortcrust Cream Ravioli in Air Fryer:

  • In a large bowl, place the flour, a pinch of salt, a pinch of baking powder, and grated lemon zest, mix well then add the cold butter cut into pieces and work the ingredients until you get a crumbly dough, add the previously beaten egg and milk, mix well until the ingredients start to combine then transfer the mixture to a lightly floured board, work the mixture until you get a smooth and homogeneous dough, cover with plastic wrap and let rest in the fridge for 30 minutes.

  • After 30 minutes, roll out a thin sheet with a rolling pin, use a 3-inch diameter pastry cutter to cut out discs, re-roll the scraps and form more discs.

    In the center of each disc, place a teaspoon of custard cream, fold the discs in half and seal them well with the prongs of a fork or you can use a ravioli sealer as we did.

  • Place the ravioli directly on the air fryer rack and cook at 356°F for about 10 minutes, until golden.

    Once at room temperature, dust them with some powdered sugar.

    P.S. During cooking, some opened despite being well sealed, so if that happens, don’t worry, they are still pretty with a bit of cream oozing out.

    Yes! You can replace the butter with vegetable oil (about 70% of the butter’s weight) or with yogurt for a lighter version.
