Ingredients for soft cantucci with chocolate chips:

  • 3 medium eggs (at room temperature)
  • 7 tbsp butter
  • 4 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 1 tsp baking powder (level)
  • 7 oz toasted almonds
  • 1/2 cup chocolate chips

Steps for preparing and baking soft cantucci with chocolate chips:

  • Melt the butter in a double boiler or microwave and let it cool well.

    In a bowl, put the granulated sugar and whole eggs, beat the eggs well with a whisk to obtain a homogeneous and frothy mixture, add the melted butter and incorporate it with the other two ingredients.

  • Gradually add the all-purpose flour, baking powder, and when the ingredients start to combine, add the chocolate chips and coarsely chopped toasted almonds, start working the mixture with your hands then transfer it to a work surface and work it until a homogeneous dough is obtained.

    Divide it into two parts and form two logs, place them on a baking sheet and bake at 350°F for 20 minutes.

  • After the time has elapsed, remove the baking sheet from the oven, let the cantucci cool, then cut them into diagonal slices, place them on the baking sheet with the cut side up, toast them in the oven for 5 minutes, then flip them and toast for another 5 minutes.

    Remove the cantucci cookies from the oven, let them cool before serving.

Variations:

If you like, you can make smaller cantucci, just divide the dough into three parts and form 3 cylinders.

You can also brush the cylinders with a beaten egg for a more golden result.
