- 1/2 cup all-purpose flour
- 1/2 cup potato starch
- 1 tsp baking powder
- 1 large egg (at room temperature)
- 1/3 cup granulated sugar
- 1/3 cup plain yogurt
- 3 tbsp vegetable oil
- 1 tsp vanilla extract
- to taste powdered sugar

Steps for Preparing and Cooking Soft Muffins in Air Fryer:
In a bowl, place the egg and granulated sugar, and using the mixers, beat until you have a frothy mixture, then add the vegetable oil and yogurt and incorporate it into the egg and sugar mixture.
Add the vanilla extract.
Sift the all-purpose flour, potato starch, and baking powder, and incorporate them into the mixture.
With the help of a spoon or an ice cream scoop, fill 6 silicone baking cups 2/3 full or you can use disposable aluminum ones (remember to lightly oil and flour them, in this case, you will get 5 muffins as they are larger than the silicone molds).
Place the baking cups on the air fryer rack and cook at 330°F for 12 minutes, checking the cooking using the toothpick test.
Let the muffins cool and then dust them with powdered sugar before serving.
Tips:
The use of potato starch makes the muffins even softer and tender.
