Ingredients for Soft Yogurt Muffins in Air Fryer:
- 2/3 cup all-purpose flour
- 7 tbsps potato starch
- 1 tsp baking powder
- 1 large egg (at room temperature)
- 1/3 cup granulated sugar
- 3.5 oz plain yogurt
- 2.7 tbsps vegetable oil
- 1 tsp vanilla extract
- as needed powdered sugar

Steps for Preparing and Cooking Soft Muffins in Air Fryer:
In a bowl, place the egg and granulated sugar. Beat them with the mixer until you have a frothy mixture, then add the vegetable oil and yogurt and incorporate them into the egg and sugar mixture.
Also add the vanilla extract.
Sift the all-purpose flour, potato starch, and baking powder and incorporate them into the mixture.
Using a spoon or an ice cream scoop, fill 6 silicone liners 2/3 full, or you can use disposable aluminum ones (remember to lightly oil and flour them well, in this case you will get 5 muffins because they are larger than the silicone molds).
Place the liners on the air fryer rack and cook at 329°F (165°C) for 12 minutes, check the doneness using the toothpick test.
Let the muffins cool and then dust them with powdered sugar before serving.
Tips:
The use of potato starch makes the muffins even softer and fluffier.
