Ingredients for soft yogurt muffins in the air fryer:
- 1/2 cup all-purpose flour (type 0)
- 1/2 cup potato starch
- 1 tsp baking powder
- 1 large egg (at room temperature)
- 1/3 cup granulated sugar (about 70 g (2.5 oz))
- 3.5 fl oz plain yogurt
- 2 2/3 tbsp neutral vegetable oil (seed oil)
- 1 tsp vanilla extract
- to taste powdered sugar

- 1 Electric whisk
- 6 Cupcake liners
Steps to prepare and bake the soft muffins in the air fryer:
In a bowl place the egg and granulated sugar; whisk them together until the mixture is frothy, then add the vegetable oil and the yogurt and incorporate them into the egg-and-sugar mixture.
Also add the vanilla extract.
Sift the all-purpose flour, the potato starch and the baking powder and fold them into the mixture.
Using a spoon or an ice cream scoop, fill six silicone liners about two-thirds full, or you can use disposable aluminum liners (remember to lightly oil and flour them; in that case you will get 5 muffins because they are larger than the silicone molds).
Place the liners on the air fryer rack and bake at 329°F (165°C) for 12 minutes; check the cooking by doing the toothpick test.
Let the muffins cool and then dust them with powdered sugar before serving.
Tips:
The use of potato starch makes the muffins even softer and more tender.
