Ingredients for the Spiced Chicken with Onions in the Multicooker:

  • 8 chicken thighs, with skin, raw
  • 4 yellow onions
  • 1 clove fresh garlic
  • 4 tablespoons extra virgin olive oil
  • 1 sprig rosemary
  • 1 tablespoon ground cumin
  • 1 tablespoon sweet paprika
  • 2 tablespoons tomato paste
  • 1.7 oz dry white wine
  • to taste fine salt
  • to taste black pepper

Steps for Preparing and Cooking the Spiced Chicken with Onions in the Multicooker:

  • Peel the onions, cut them in half, and slice them not too thinly.

    Wash the chicken well, dry it, and remove any fatty parts.

    In the multicooker basket, place the extra virgin olive oil, the garlic clove, the rosemary sprig, and set the SAUTÉ program. When the oil is hot, add the chicken, place the side with the skin in contact with the basket, brown it well, then turn it over and finish browning.

  • In a small bowl, place the tomato paste, add a little warm water, and stir well to dissolve it completely.

    Add the tomato paste on top of the chicken, add the spices, salt, and pepper, deglaze with white wine, and when it has evaporated, add the slightly salted onions.

  • Close the lid of the multicooker, close the valve, set the PRESSURE COOKING program, and cook for 10 minutes, then let the pressure out, turn the chicken, and cook again under pressure for another 10 minutes.

    Serve the spiced chicken accompanied by the onions.

    COOKING WITH THE PRESSURE COOKER:

    For cooking in the pressure cooker, the ingredients and times are the same. First, brown the meat and add the other ingredients, then close the pressure cooker and cook for the times indicated by the recipe.

The amount of spices is very subjective according to your taste. You can increase or decrease them. Instead of sweet paprika, you can use hot paprika if you love more intense flavors.
