- 1.3 lbs veal stew meat
- 3 tbsp extra virgin olive oil
- 1 yellow onion (small)
- 1 carrot
- 1 clove fresh garlic
- 1/2 stalk of celery
- 1/2 cup dry white wine
- 17.6 oz frozen medium peas
- to taste fine salt
- to taste pepper
Tools for cooking the stew with peas in a pressure cooker:
- 1 Pressure Cooker
Steps for cooking the stew with peas:
Peel the onion, dice it into small cubes, peel the carrot and dice it to the same size as the onion, and finally wash the celery, remove the strings, and dice it.
Alternatively, you can use 4-5 tablespoons of frozen mirepoix.
In the pressure cooker, add the extra virgin olive oil, garlic clove, and vegetables, cook for a few minutes over high heat, then add the stew meat and brown it well, season with salt, and deglaze with the white wine.
When the wine has evaporated, cover the pot with its lid, set the valve to the pressure cooker icon, increase the heat, and when the pot is steaming and the red valve rises, lower the gas and cook for 10 minutes.
After ten minutes, turn off the gas, release the steam from the pressure cooker by setting the valve to the steam icon, and when the red valve lowers, you can open the pot.
Add the frozen peas, season with salt and pepper, stir well, and replace the lid, bring it to pressure, and cook for 10 minutes over low heat.
Once the time is up, let out the steam until the red valve lowers, open the pressure cooker, and gently stir the stew with peas.
Serve on individual plates.
COOKING WITH THE MULTICOOKER:
You can also make this recipe with the multicooker; the cooking times and ingredients remain unchanged. First, proceed with sautéing to brown the vegetables and meat, then with the pressure cooking program.
Advice:
If you use fine peas, cook them for only 5 minutes, increasing the meat’s cooking time by 5 minutes before adding the peas. In this case, also add 1/4 cup of hot water or broth to the meat.
