Stewed potatoes in the pressure cooker, a side dish that pleases the whole family, soft potatoes cooked in tomato sauce, a recipe that always brings back childhood memories.
For this recipe, we used the Lagostina Irradial Control Lagoeasy’Up, 5 L, 22 cm pressure cooker and it was immediately easy to use, becoming our ally in the kitchen with some small tricks.

Ingredients for Stewed Potatoes in the Pressure Cooker:
- 1.75 lbs potatoes
- 2 cups tomato sauce (or tomato pulp)
- 2 tbsps extra virgin olive oil
- 1 clove garlic
- to taste fine salt
- to taste black pepper

Steps for Preparing and Cooking the Stewed Potatoes:
Peel the potatoes, rinse them well under running water, cut them into medium-sized chunks and place them on a cloth.
In the pressure cooker, add the extra virgin olive oil and the clove of garlic, turn on the gas and let the oil flavor well, add the potatoes and let them brown well for 2/3 minutes.
Add the tomato sauce or pulp, salt and pepper, stir well with a spoon.
Close the pot with its lid, close the valve and bring the pot to pressure over medium-high heat, then lower the heat to minimum and cook for 12 minutes.
For a great result, the potatoes should be well-cooked, not mushy but breaking easily with a fork, if you prefer less soft potatoes, reduce the cooking time by a few minutes.
After the time has elapsed, turn off the gas, let the pressure escape from the pot, remove the lid, stir the potatoes, and serve immediately.
PROCEDURE WITH THE MULTICOOKER:
In the basket, put the garlic, the oil and with the SAUTÉ program, let the oil flavor well, add the potatoes and let them brown for 2/3 minutes, add the tomato sauce or pulp, salt and pepper, set the PRESSURE COOK program, close with the lid, close the valve and cook for 12 minutes.
After the time has elapsed, turn off the electric pot, let it vent, remove the lid, stir the potatoes well and serve them nice and hot.
Notes:
You can increase the amount of tomato sauce or pulp up to 600 ml if you prefer a preparation with more sauce.
