Steps for preparing sugar-free red berry and Greek yogurt ice cream:
For this recipe, we used frozen red berries bought directly from the supermarket. Alternatively, you can take red berries (blueberries, blackberries, raspberries, and strawberries), wash them well, dry them, and then place them on a tray lined with parchment paper (so they don’t stick) in a single layer, then put them in the freezer for at least 2 hours or until fully frozen.
Put the frozen red berries into the mixer, start blending them for a few seconds, then add the Greek yogurt and blend everything for a couple of minutes until you get a smooth and velvety cream.
P.s. set aside a few whole red berries for the final decoration.
Put the ice cream directly into the cups, decorate with fresh mint and the reserved red berries.
You can also prepare it in advance and store it in the freezer, then let it soften for 5/10 minutes at room temperature before serving it in individual cups.
If you desire a sweeter ice cream, you can add erythritol or honey after blending and then stir it well into the mixture with a spatula.
Notes
The portion is for 2 cups as seen in the photo, if you use cups like those at the ice cream shop you will get 3 or 4 servings.
