  • 1 3/4 oz walnuts
  • 1 3/4 oz dried figs
  • 2 oz boiled chestnuts
  • 1 oz raisins
  • 3/4 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 tsp dry yeast
  • 1 tbsp honey
  • 1/2 cup warm water
  • 1/4 tsp fine salt

Steps for Preparing and Cooking Whole Wheat Rolls with Chestnuts and Nuts:

  • In a bowl, put the warm water, add the honey and stir well to dissolve it, add the dry yeast and mix well to obtain a lump-free liquid mixture.

  • Prepare the nuts:

    – soak the raisins in warm water for about ten minutes, then remove the water and dry them well

    – chop the walnuts not too finely

    – cut the dried figs into pieces

    – dice the boiled chestnuts

  • In a large bowl, put the whole wheat flour and all-purpose flour and mix well with a spoon, add the prepared yeast and start combining the ingredients, then add the salt and the prepared nuts.

    Work the mixture well with your hands to form a homogeneous dough that you will let rise until doubled (about 2/3 hours depending on the warmth in the house).

  • Once the dough has risen, transfer it to a floured pastry board, make a few reinforcement folds, and divide it into 4 parts to form 4 rolls, make incisions on the surface, and place them on the air fryer rack lined with perforated parchment paper.

    Let them rise for 30 minutes.

    Preheat the air fryer, then cook at 320°F for about 25 minutes, until golden.

    Oven baking: 350°F for about 35 minutes, until golden.

    Allow them to cool before consuming.

Tips:

You can also use other nuts according to your taste: almonds, hazelnuts, dried apricots.
