The yogurt waffles are super fluffy and delicious, perfect for a super breakfast.
In preparing the yogurt waffles, you can use plain yogurt or fruit-flavored, stracciatella, or nutty yogurt, so each morning you have a new flavor for your breakfast.
You can use either butter or seed oil according to your taste.
For this recipe, we used our new waffle maker, easy to use and with a medium-low cost but excellent quality/price ratio.
In the video, half of the dose was made, resulting in 3 waffles, full dose for 6 waffles.

Ingredients for the Yogurt Waffles:
- 2 medium eggs (at room temperature)
- 2.8 oz granulated sugar
- 0.2 cup seed oil (alternatively 2.5 oz of butter)
- 1 plain yogurt (or fruit-flavored)
- 1 1/4 cup all-purpose flour
- 1 teaspoon baking powder (level)
- 1 pinch fine salt
- as needed seed oil
- as needed Nutella
- as needed chocolate decorations

Steps for Making the Waffles:
Separate the egg whites from the yolks and place them in two separate bowls.
In the bowl with the egg whites, add a pinch of salt and whisk them to stiff peaks with an electric whisk.
In the bowl with the yolks, add the granulated sugar and whisk with an electric whisk until you have a frothy and almost white mixture.
Now, add the plain or fruit-flavored yogurt to taste, the seed oil, or alternatively the melted butter, melted in the microwave for 1 minute or in a double boiler.
Work the mixture well until homogeneous, finally add the sifted all-purpose flour with the baking powder.
When the mixture is smooth, turn off the electric whisk and use a spatula to fold in the whipped egg whites, incorporating them into the mixture with movements from bottom to top to avoid deflating the mixture.
Heat the waffle maker, when ready, brush the plate with seed oil and pour a bit of the mixture to fully cover the surface, close the plate, and cook for about 5 minutes (check the waffles after 4 minutes), they should be golden.
Carefully remove the waffles from the plate using a silicone spatula and place them on a serving plate, continue cooking the other waffles until the mixture is used up.
Decorate the waffles according to your taste, we used Nutella and chocolate decorations, but you can also use maple syrup or caramel, yogurt, or simply fresh fruit.
Advice:
For an even more delicious version, you can use stracciatella yogurt.
