Air Fryer Cheesecake after all my Winter Cake recipes I really needed to make a perfect cold cake for the summer!
I had already made the PEACH CHEESECAKE and the MASCARPONE CREAM AND STRAWBERRY CHEESECAKE that are no-bake and delicious, but after making the MILK CHOCOLATE PANNA COTTA and the Banana Panna Cotta I realized I was out of gelatin, so I absolutely had to find another method to firm it up.. so I thought of making the New York cheesecake, which is simply a cheesecake but baked. Then I decided to cook the cheesecake in the air fryer because after the Soft Cake in Air Fryer and the Apple Cake in Air Fryer I thought I could cook the cheesecake in the air fryer as well.. and the result was truly amazing! So try it too and I’m sure you’ll fall in love with it! Then garnish it with Homemade Strawberry Jam or Cherry Jam or berries.. and, if you like them, a few Meringues that always go well!

Ingredients
- 6.35 oz Digestive biscuits
- 6.3 tbsp butter
- 7.05 oz cream cheese
- 2/3 cup heavy cream
- 1/2 cup sugar
- 1 egg
- 2.82 tbsp cornstarch (or flour)
- vanilla
- mixed berry jam

- 1 Pan springform 8.66 inches
Preparation
Put the digestive biscuits in a food processor and blitz them into powder.
Transfer the biscuit powder into a bowl.
Put the butter in a bowl and melt it in the microwave at 800 W for 40 seconds or in a bain-marie.
Add the melted butter to the crushed biscuits in the bowl.
Mix the butter with the biscuits to combine them.
Transfer the mixture into an 8.66-inch springform pan and press it down with a spatula, allowing some to rise up the sides.
Place the base in the fridge while you prepare the cream.
Put the cream cheese in a large bowl along with the sugar and liquid cream.
Add the whole egg, flour, and vanilla extract.
Mix everything to obtain a smooth and lump-free mixture.
Pour the mixture into the pan.
Cook the cheesecake in a preheated air fryer at 338°F for 25 minutes.
Once cooked, remove it from the oven and let it cool for at least 2 hours.
Serve garnished with jam of berries or other flavors, or with hazelnut cream or melted dark chocolate.
Storage
The air fryer cheesecake can be stored in the fridge for 3 days.
