Baked Mediterranean Gnocchi a first course, or maybe a side dish… I’m not sure, I just know that after making my Potato Gnocchi, my Pesto Gnocchi, and then my Fried Potato Gnocchi, I decided to bake them as well, with a tasty, flavorful, and very simple seasoning!
I made the Mediterranean gnocchi with ingredients and aromas that remind us of our peninsula and that you surely have at home! Moreover, I’ve given you a great idea for making baked gnocchi that can also be served as a side dish.. they look like small, soft, and tasty new potatoes!

Ingredients
- 1.32 lbs potatoes
- 2.4 cups all-purpose flour
- 5.3 oz cherry tomatoes
- 1 red Tropea onion
- 1.4 oz Taggiasca olives
- 0.7 oz capers
- pine nuts
- Parmigiano Reggiano DOP
- extra virgin olive oil
- salt
Preparation
Boil the potatoes until they are soft.
Mash the potatoes with a potato masher and collect the puree in a bowl.
Add the all-purpose flour and a pinch of salt and knead to obtain a smooth and homogeneous mixture.
Shape into ropes and then cut the gnocchi with a knife.
Score the potato gnocchi on a fork or gnocchi board.
Blanch for two minutes the potato gnocchi in salted boiling water, then drain them and collect them in a bowl.
Pour the blanched potato gnocchi into a baking dish lined with parchment paper.
Add the cherry tomatoes washed and halved.
Add the Tropea onion peeled and cut into wedges.
Add the capers, Taggiasca olives, and pine nuts.
Add a pinch of salt, then cover the entire surface with grated Parmigiano Reggiano.
Drizzle the surface with olive oil, then bake in a preheated static oven at 392°F for 10 minutes and finish with 5 minutes of grill.
Serve the baked Mediterranean gnocchi hot.
STORAGE
Store the baked Mediterranean gnocchi in the fridge for up to 3 days.
