Christmas Cup with Pandoro and Mascarpone

Christmas Cup with Pandoro and Mascarpone is a truly delicious and spectacular spoon dessert, prepared with the base of my Thick Mascarpone Cream, perfect to serve as a dessert at Christmas lunch, or why not, even at the Christmas Eve dinner and subsequent meals!
The Christmas cup with pandoro and mascarpone is prepared really quickly and in a few moves, the thing that will take you the most time will be preparing the mascarpone cream, for the rest, about ten minutes and you can put your sweet cups in the fridge, ready to be enjoyed whenever you want.
To garnish the cups, I chose a mascarpone and coffee cream, because I find it pairs well with pandoro, but of course, you can replace it with a Custard, or a pistachio cream!

Christmas Cup with Pandoro and Mascarpone

Ingredients

  • 7 oz pandoro
  • 9 oz mascarpone
  • 1/4 cup coffee
  • 2/3 cup powdered sugar
  • 3/4 cup heavy whipping cream
  • to taste unsweetened cocoa powder

Steps

  • Pour the heavy whipping cream into a tall glass and whip it with electric beaters until stiff peaks form.
    In a bowl, add the mascarpone along with the cooled coffee and powdered sugar.
    Start working the three ingredients together, then gradually fold in the whipped cream, mixing from bottom to top to keep it fluffy.

  • Cut the pandoro into slices that are not too thin, and then into pieces roughly the size of the dessert cups you’ll be using.
    You can choose to soak the pandoro in a little coffee or milk; I didn’t do it because if the Christmas cups stay in the fridge overnight, the pandoro will absorb the moisture from the cream.
    Pour some cream at the bottom of the cup, then add a piece of pandoro and alternate again with cream and then pandoro.

  • Finish with a layer of cream, a slice of pandoro, and a sprinkle of unsweetened cocoa powder.
    Place in the fridge until it’s time to serve the Christmas Cup with Pandoro and Mascarpone at the table.

STORAGE

Store the Christmas Cup with Pandoro and Mascarpone in the fridge for up to 3 days.
