Cookies in Air Fryer: the recipe to make delicious cookies for breakfast or snacks that are easy and quick, an excellent substitute for a classic JAM TART always prepared with my infallible SHORTCRUST PASTRY, although you could prepare them with either Oil Shortcrust Pastry or Cocoa Shortcrust Pastry!
Cookies baked in the air fryer are really easy to prepare, and with the same recipe, you could also prepare bases for Margherita Cookies or OCCHI DI BUE and then fill them with PASTRY CREAM or Coconut Cream or even with your preferred PRESERVE!

Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 cup butter
- 1/2 cup sugar
- 1 egg yolk
Preparation
Place the softened butter together with the sugar in a large bowl.
Start mixing the two ingredients to get a cream.
Add also the egg yolk and blend.
Finally, add the flour in stages, and initially mix with a spoon. Gradually, as the dough thickens, transfer it to the work surface and start kneading by hand until you form a ball.
Wrap it in plastic wrap and let it rest for at least half an hour in the refrigerator.
Roll out the dough with a rolling pin to a thickness of about 1/4 inch.
Use your preferred cookie cutter to shape your cookies.
Place the cookies on a sheet of baking paper and transfer them into the basket of the air fryer.
Bake the cookies in the air fryer for 8 minutes at 338°F.
Let the cookies cool before serving.
This dough will make crispy cookies that are perfect for any occasion!
Storage
Store the cookies in the air fryer at room temperature for two weeks.
