Fried eggs ice cream is a dessert made with ice cream and canned peaches typical of the ’80s that I used to always have for breakfast a few years ago instead of my classic water pancakes or with almond flour..

This dessert reminds me a lot of my childhood when my dad took me to Recco, to a famous ice cream shop, to eat this very fried eggs ice cream. I usually always opted for a simple cup with berry ice cream or strawberry ice cream, while my mom always took the classic coffee affogato. My dad, on the other hand, always and inevitably chose the fried eggs ice cream because he still says that the cream is the real ice cream that reveals if the ice cream maker is good!

Well, that’s the whole story of my family’s favorite ice cream flavors, but now I’ll explain how to make it at home with the ice cream maker!

Ingredients

  • 2 cups fresh liquid cream
  • 1/4 cup sugar
  • 3.4 tbsp syrup from canned peaches
  • 4 whole canned peaches

Preparation

  • Pour the fresh liquid cream into a saucepan. Add the granulated sugar.

    Bring the saucepan to the heat and heat gently, for a few minutes, to completely dissolve the sugar.

    Turn off the heat and transfer the mixture to chill completely in the fridge.

  • Pour the completely chilled mixture into the ice cream maker and start it.

    Add the syrup from the canned peaches.

    After about 10-15 minutes, your ice cream will have achieved a perfect consistency.

  • Transfer the ice cream into ice cream cups or clay containers and garnish with a canned peach cut in half.

    Serve immediately so that the fried eggs ice cream does not melt.

STORAGE

Store the fried eggs ice cream in the freezer for up to 5 days; I do not recommend long storage as the ice cream in the freezer crystallizes and becomes too hard.
