Greek Yogurt Pancakes are not as light as my WATER PANCAKES, but they are really delicious because I used all-purpose flour in this recipe. You can replace it with almond flour to make almond flour pancakes with Greek yogurt.

Greek yogurt pancakes are very easy to prepare and are delicious because they are very soft and pair wonderfully with many other ingredients, especially with fruits like strawberries, raspberries, or blueberries.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup Greek yogurt
  • 1/4 cup milk
  • 3 tbsps sugar
  • 2 tsps baking powder
  • 1 egg

Preparation

  • Crack the egg into a large bowl.

    Add the Greek yogurt and milk to the bowl with the egg.

  • Add the sugar and start mixing the ingredients with a whisk.

    Once the mixture is well combined, start sifting the flour on top.

  • Also sift the baking powder and then mix the dry ingredients into the batter with the whisk to achieve a smooth, lump-free batter.

  • Heat a nonstick skillet over the stove.

    When the pan is hot, pour a ladleful of the batter into the center of the pan.

    Cook for a few minutes on the first side until bubbles start to form on the surface. Then, with a spatula, flip the Greek yogurt pancakes and finish cooking on the second side.

    Transfer the cooked pancakes to a serving plate, and continue cooking until all the batter is used up.

    Serve the Greek yogurt pancakes at the table accompanied by fruit, honey, maple syrup, or sweet spread.

STORAGE

Greek yogurt pancakes can be stored for up to 3 days in the fridge, sealed in an airtight food container.
