Lactose-Free Canestrelli

Lactose-Free Canestrelli are typical Ligurian Sweets, specifically small flower-shaped cookies with a hole in the center, the lactose and milk-free variant of CANESTRELLI, perfect for my friend Dany who is allergic to milk!

Certainly more famous than the BISCOTTI CAPORALI, these ancient cookies originate from Torriglia, in their classic version, then modified into different flavors that I gradually want to try to prepare at home..

Canestrelli are perfect to accompany coffee or tea and are usually served with a generous dusting of powdered sugar.

I tried to remake them because I adore them, their scent and fragrance are unmistakable, indispensable at the end of Sunday lunches with mom and dad!

If you like, you can cook the Genoese canestrelli in an air fryer at 340°F for 10 minutes!

Lactose-Free Canestrelli

Ingredients

  • 2 1/2 cups all-purpose flour
  • 7 oz margarine
  • 1/2 cup sugar
  • 1 yolk
  • powdered sugar

Tools

  • 1 Cutter canestrelli cutter

Preparation

  • For this preparation, the margarine does not necessarily need to be soft.

    Place the flour in a mound on the work surface.

    Add the sugar and the egg yolk. Set aside the egg white.

    Also add the margarine in cubes and start working the ingredients with your hands.

    Knead more energetically to obtain a smooth and well-kneaded ball.

  • Roll out the pastry with a rolling pin to a thickness of about 1/4 inch.

    Cut your canestrelli from the pastry and transfer them onto a baking sheet lined with parchment paper.

    Re-knead the “scraps” from the canestrelli and roll them out again to cut more canestrelli.

    Slightly beat the egg white and brush the surface of each canestrello.
    Bake the lactose-free canestrelli in a static oven at 350°F for 10 minutes.

    Once ready, remove the lactose-free canestrelli from the oven and let them cool completely before removing them from the tray.

    Sprinkle powdered sugar on the surface and serve.

Storage

Lactose-free canestrelli can be stored for 10 days at room temperature.
