Lemon Cake in Air Fryer is a variation of my Eggless Lemon Cake, cooked in an air fryer like the Soft Cake in Air Fryer and the Apple Cake in Air Fryer.
Since I love lemon desserts so much, I decided to prepare this fragrant Cake with lemon juice and zest. But to make it softer, this time I decided to use butter instead of oil, and the result is a soft and delicious cake perfect for both breakfast and a snack for the whole family!

Ingredients
- 1 3/4 cups all-purpose flour
- 2/3 cup sugar
- 1/2 cup butter
- 1/3 cup potato starch
- 2 lemons (juice and zest)
- 2 eggs
- 1 packet baking powder
Tools
- 1 Lemon Zester
Preparation
Place the eggs in a bowl with the sugar.
Mix the two ingredients with a whisk.
Add the softened butter and the zest and juice of the two lemons.
Mix to combine.
Finally, add the dry ingredients: flour, potato starch, and sieved baking powder.
Give the batter a final stir to smooth out the mixture and make it creamy and lump-free.
Pour the mixture into a 9-inch springform pan and level the surface.
Bake the lemon cake in the air fryer at 338°F for 30-35 minutes, covering it halfway through if the surface darkens too much.
Prepare the lemon glaze to put on the cake’s surface.
Place the powdered sugar in a bowl and add the juice of half a lemon, a little at a time.
Mix the two ingredients, and when the lemon glaze is creamy but thick enough, pour it over the cake.
Serve the cake immediately or let the glaze set before serving.
Storage
The lemon cake in air fryer keeps for 4 days at room temperature.
