Lemon chicken thighs easy and delicious!

A budget-friendly and easy main course recipe, perfect for summer when it’s hot and you don’t feel like turning on the oven!

After the LEMON CHICKEN SCALOPPINE and the lemon and thyme chicken drumsticks, I couldn’t help but also prepare lemon chicken thighs, which are affordable and tasty, fragrant and perfect to pair with side dishes like the ZUCCHINI, PEPPERS, or EGGPLANT.

If you’re tired of the usual CHICKEN CURRY BITES or the CHICKEN MEATBALLS, you just have to try these lemon chicken thighs because they are really delicious and very tasty!

Ingredients

  • 2 chicken thighs
  • 2 lemons
  • extra virgin olive oil
  • salt
  • rosemary
  • sage

Preparation

  • Heat a pan on the stovetop on high flame.

    Add the oil, rosemary, and sage.

    Wash a lemon, slice it and add some slices to the pan.

  • When the pan is hot, add the chicken thighs and salt to taste.

    Sear the lemon chicken thighs on high flame for a few minutes on both sides.

  • When the chicken thighs are well-seared, add the lemon juice and cover with a lid.

    Continue cooking for about 30 minutes, turning the chicken occasionally to ensure it cooks well inside.

    Serve the lemon chicken thighs hot.

Storage

The lemon chicken thighs can be stored in an airtight food container in the fridge for 2 days. Heat them in the microwave or in a pan.
