STORAGE
Store the Tuscan pici in the fridge for one day. Otherwise, you can dry them well spread out on a perforated rack or a pasta drying rack for three days in a place that is not too warm but free of humidity.
If you prefer, you can also freeze the pici, first spacing them well apart on a tray, and then gathering them in a freezer food bag.
