Protein Pudding and also light, a valid alternative to my MILK-FREE PUDDING, perfect for those on a diet who still want to indulge without feeling too guilty. Recently, I decided to try the Dukan diet, and even though at first, I feared I would miss fruits, vegetables, grains, and sweets in general, during the diet I had to change my mind, thanks also to the help of the DUKAN PUDDING and this delicious protein pudding, or light pudding, made with whole eggs and skim milk.

Ingredients
- 1 and 2/3 cups skim milk
- 4 eggs
- 1 tbsp sweetener
- 1/3 cup cornstarch
- 1 packet vanillin
- 3 sheets gelatin (optional)
Preparation
To prepare the Protein Pudding, first you need to heat the milk in a saucepan.
In a separate bowl, crack the eggs, add the sweetener, cornstarch, and vanillin, and whisk the mixture by hand until smooth and lump-free.
As soon as the milk is about to boil, pour it over the eggs in a thin stream while continuing to stir.
Transfer the entire mixture back on the heat and let it thicken for about 5 minutes.
If you do not want to use cornstarch, you can use 3 sheets of gelatin to thicken your protein pudding. So, while heating the egg and milk mixture, soak the gelatin sheets in cold water in a separate bowl.
When the milk and egg mixture is still nice and warm, and the gelatin has softened, squeeze the sheets and add them to the cream.
Stir vigorously and quickly to dissolve the gelatin and distribute it evenly throughout the protein pudding.
Divide the still-warm mixture into individual molds or small bowls.
Let it cool at room temperature, then transfer it to the fridge to set.
Serve cold from the fridge or at room temperature according to your preferences.
ADVICE:
You can replace vanillin with the seeds of a vanilla pod, or with cinnamon.
You can choose to divide the mixture into 4 or 6 individual servings.
Storage
Store the Protein Pudding in the fridge for up to 3 days.
