To prepare semolina tagliatelle, you won’t need many ingredients; semolina flour and eggs will suffice. If you want a vegan variant, you can comfortably replace the eggs with water.

Ingredients
- 2.5 cups remilled durum wheat semolina flour
- 3 eggs
Steps
Pour the semolina flour in a mound on the work surface. Create a hole in the center and pour in the cracked eggs.
Start beating with a fork to incorporate air into the eggs and gather the surrounding flour.
As the mixture becomes more consistent, start kneading by hand more energetically until a smooth and homogeneous dough is obtained.
Wrap the semolina tagliatelle dough in plastic wrap and let it rest for about thirty minutes at room temperature.
After the resting time, divide the dough into two or three parts and roll it out by hand with a rolling pin, or with a pasta machine, until a thickness of a few millimeters is reached.
At this point, you can decide whether to cut the tagliatelle by hand, with a knife, or with the specific cutter to be placed on the pasta machine.
Continue in the same way until all the dough is used.
Gather the tagliatelle on a lightly floured tray or on a pasta drying rack.
Cook the tagliatelle in plenty of boiling salted water for about 5-6 minutes.
STORAGE
Store raw tagliatelle at room temperature for one day.
Store semolina tagliatelle in the fridge for up to two days. Alternatively, let them dry on a long pasta drying rack for several days in a cool and ventilated place.
