Spanakopita in Air Fryer

Spanakopita in Air Fryer is a delicious Greek Savory Pie recipe made with phyllo dough, spinach, and Greek feta. After using feta all summer to make FETA AND TOMATOES and BAKED FETA WITH TOMATOES, I decided to use it as the cheese to put inside this super tasty savory pie! Ingredients

  • 3 sheets phyllo dough
  • 14 oz cooked spinach
  • 7 oz feta
  • 2 eggs
  • 1 onion
  • extra virgin olive oil
  • salt

Tools

  • 1 Baking Pan 12×8 inches

Preparation

  • Cook the fresh spinach in a pan along with the olive oil and a finely chopped onion.

    When the spinach has wilted, transfer it to a bowl.

    Add the crumbled feta by hand, the two eggs, and salt to taste.

  • Grease the base of a baking pan with a little extra virgin olive oil.

    Cut the phyllo dough sheets in half to get 6 sheets.

    Place one phyllo dough sheet, then grease it with oil over the entire surface and cover with a second sheet. Grease the surface of the second sheet and cover with a third sheet.

  • Fill the spanakopita with the spinach and feta filling and level the surface with a spatula.

    Cover with another 3 sheets of phyllo dough, greasing each sheet before layering the next.

  • Trim excess edges with a knife.

    Grease the entire surface of the spanakopita with oil, then place it in the air fryer and cook for 20-25 minutes at 340°F.

    Remove the spanakopita and serve it either warm or cold.

Storage

Store the spanakopita in air fryer in the fridge for 3 days, or freeze it.
