Air Fryer Frittata, an easy and quick main course to add to the collection of air fryer recipes. Frittatas are a very versatile dish and there are thousands of variations, such as the frittata with potatoes and sausage or those made with zucchini, like the rice frittata with zucchini.
This preparation has become one of my favorite solutions: it is ready in a few minutes, stays tall, soft and well cooked without the need to flip it and without filling the kitchen with odors. Just mix the eggs with the chosen ingredients, pour the mixture into the mold and let the air fryer do the rest. It’s practical, light and perfect when I want something simple but well made, even at the last minute.

Ingredients
- 1 zucchini
- 5 eggs
- 0.35 oz cherry tomatoes
- 2 tbsp grated Parmesan cheese
- to taste extra virgin olive oil

How to make the frittata in the air fryer
In a bowl, beat the eggs, add the milk and a pinch of salt.
Add the Parmesan, the grated zucchini and the cherry tomatoes cut into pieces, then beat everything well to combine the ingredients.
Pour everything into the parchment paper (the one with raised edges) already placed in the air fryer, and cook at 356°F for 15 minutes.
Once cooked, let it rest for 1 minute, then cut into slices.
Storage and tips for the air fryer frittata
You can store it in the refrigerator in an airtight container until the next day. One of the peculiarities of the frittata is that you can add the ingredients you prefer, such as very thinly sliced onion or ham, salami or pancetta.
