Ingredients
- 14 oz potatoes (peeled)
- 1.5 oz grated Parmesan
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- 4 eggs
How to make potato baskets in the air fryer
Boil the potatoes in plenty of water, then mash them and place them in a large bowl.
Add the Parmesan, then season with salt, pepper and nutmeg; mix well until you obtain a soft, compact mixture.
Form small rounds and cook in the air fryer for 10 minutes.
Add the egg to the center and return to the air fryer at 356°F for about 9 minutes.
Recipe variations
At the end of cooking, after the egg, you can add cooked ham and speck cut into small pieces. Flavor them with the spices you prefer.
