Ingredients

  • 3 eggs
  • 3/4 cup sugar
  • 1 packet baking powder
  • 1 cup raisins
  • to taste lemon zest
  • 4 apples
  • to taste ground cinnamon
  • to taste rum
  • 1/4 cup milk
  • 2 1/2 cups all-purpose flour
  • 1/4 cup vegetable oil

How to Prepare Apple and Raisin Cake

  • First, soak the raisins in hot water with a shot of rum, allowing them to soften. Meanwhile, in a large bowl, beat the eggs with the sugar using an electric mixer.

  • Beat until frothy, then add the grated lemon peel and vegetable oil, followed by the milk.

  • Add the sifted flour and baking powder.

  • Finally, add 2 diced apples, the well-drained raisins, and mix well.

  • Line a 9-inch (22-24 cm) cake pan with parchment paper (or butter it instead). Pour the mixture into the pan, level it, and arrange the remaining apples, thinly sliced, on top along with the remaining raisins.

  • Bake in the oven at 350°F (180°C) for about 45 minutes or until golden brown.

Storage and Tips for Apple and Raisin Cake

The apple and raisin cake stays soft for several days under a cake dome. You can replace the apples with pears. If you don’t have a 9-inch pan, you can use a 9.5-inch (24 cm) bundt pan.
