Ingredients

  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 apples (large)
  • 1/4 cup cookies
  • 2 tbsps brown sugar
  • to taste ground cinnamon
  • to taste lemon zest

Steps

  • In a bowl, combine flour, sugar, eggs, and butter. Start kneading until you get a firm dough.

  • Let it rest in the refrigerator for at least 1 hour covered with plastic wrap.

  • Prepare the filling: Peel and dice the apples,

  • Add sugar, cinnamon, and grated lemon zest, then cook over heat.

  • After cooking, blend everything with an immersion blender

  • Then add the crumbled cookies to the mixture and mix until fully combined. Transfer everything to a bowl and let it cool to room temperature.

  • Now roll out the pastry over a sheet of parchment paper to a thickness of about 1/4 inch and use a pastry cutter to create many discs.

  • Fill with the mixture then join the two ends, and transfer them to a baking sheet lined with parchment paper.

  • Bake your Apple Bow Tie Cookies at 350°F in a static oven for 12-15 minutes.

  • Remove from the oven and let cool slightly, then sprinkle with powdered sugar.

Storage

Apple Bow Tie Cookies can be stored under a cake dome for up to 3-4 days.
