Ingredients

  • 2 eggs
  • 1 cup + 2 tbsp all-purpose flour
  • 2 3/4 tbsp milk
  • to taste ground cinnamon
  • 2 1/2 tbsp granulated sugar (or 1–1 1/4 tbsp erythritol (12–15 g))
  • 1 apple
  • 3/8 cup (6 tbsp) Greek yogurt
  • 2 tsp baking powder

How to make apple pancakes without butter

  • Whisk the eggs together with the sugar, then add the ground cinnamon, the yogurt and the milk and mix well.

  • Fold in the sifted baking powder and flour, mixing until you obtain a well-combined batter.

  • Peel an apple and cut it into very thin slices or grate it, then add it to the batter.

  • Heat a nonstick pan and grease it with a drizzle of oil. Pour a small ladle of batter and cook for a short time with the lid on.

  • Flip to the other side and cook until golden. Continue in the same way with the remaining batter, stacking the pancakes on a plate so they stay warm.

  • At this point you can enjoy them plain, or top them as you prefer: caramel sauce, maple syrup, yogurt garnished with a sprinkle of cinnamon, or served with blackberries and blueberries.

They keep perfectly in the refrigerator in an airtight container for up to two days. They can also be frozen. I recommend reheating them briefly in a pan or in a toaster. I do not recommend the microwave as it makes them rubbery. To obtain soft, tall pancakes, heat the griddle to the right temperature and slice the apples very thinly; also always cook your pancakes with the lid on for even cooking.
