- 2 eggs
- 3 apples
- 2 oz butter
- 1 3/4 cups all-purpose flour
- 2/3 cup milk
- 1 cup sugar
- to taste lemon
- 1 tbsp baking powder
- 1 oz raisins
- 1/3 oz pine nuts
How to Make Apple, Raisin and Pine Nut Cake
In a large bowl, break the eggs, add the sugar and lemon zest.
Pour in the melted butter and milk gradually, then incorporate the flour and baking powder.
Peel the apples and slice them fairly thinly. Next, pour the mixture into a baking pan lined with parchment paper or buttered and floured, about 9 inches.
At this point, decorate the surface with the apples and sprinkle with raisins (soaked for about ten minutes in warm water), complete with pine nuts.
Bake in a preheated oven at 350°F for 35 minutes. If you see it starting to darken too much, cover it with aluminum foil for the last 10 minutes.
Remove from the oven, let it cool slightly, and serve with a dusting of powdered sugar.
Storage and Tips for Apple, Raisin and Pine Nut Cake
You can store it under a cake dome for up to 3-4 days. You can replace the apples with pears. The raisins can be soaked in rum for added flavor.
