The assorted puff pastry bites are made by filling the two pastries with Philadelphia. To prepare them, I used cheeses, tomato paste, and olives, and they are baked in the oven for only 15 minutes, and you’re done!

Ingredients
- 2 rolls puff pastry
- 1/2 cup cream cheese
- 2 oz oz brie
- to taste sun-dried tomatoes
- to taste pine nuts
- to taste orange marmalade
- to taste fig compote (or onion compote)
- 2 tbsp tomato paste
- to taste olives

How to make assorted puff pastry bites
Roll out the first puff pastry, then spread the cheese.
Place the second puff pastry on top.
Then cut into small squares (2×2 inches)
Press lightly with a small glass.
Make small holes with the fork tines.
Then decorate with tomato paste, oregano, and a small piece of scamorza, the second filling with brie and pine nuts, the third filling with a small piece of sun-dried tomato, and the last filling with two olives.
Bake in the oven at 390°F for about 15-20 minutes.
Remove from the oven, and with the brie ones, you can garnish them with half a teaspoon of onion compote. Serve hot! But they’re also delicious cold.
Variations of Assorted Puff Pastry Bites
You can replace the sun-dried tomatoes in oil with a small piece of bell pepper or a marinated mushroom. Instead of Philadelphia, you can use grated Parmesan cheese and a drizzle of oil.
