Ingredients
- 1.3 lbs potatoes
- 1 egg
- 0.25 cups grated parmesan cheese
- to taste salt
- 7.8 oz bacon
- 4.2 oz scamorza
How to Make Bacon-Wrapped Potato Meatloaf
Wash the potatoes and place them in a pot with cold water. Bring the water to a boil and let the potatoes cook for about 30 minutes. Once cooked, pass them through a potato masher while still hot with the skin on.
Add salt, grated cheese, and egg to the hot potatoes and mix everything until you get a well-blended dough.
Next, lay the bacon slices on a well-oiled sheet of paper, creating a rectangle.
Take the potato mixture and press it over the bacon slices, shaping it into a rectangle.
Fill with cheese, then roll and seal the sides by shaping the potatoes with your fingers. Close it with parchment paper.
Transfer it to a baking tray and bake the potato meatloaf in a preheated oven at 356°F (180°C) for about 30-35 minutes. Remove from oven and serve hot and cheesy.
Storage and Tips for Bacon-Wrapped Potato Meatloaf
The meatloaf can be stored in the refrigerator well-covered with plastic wrap. It can be frozen once cooled and sliced. For a vegetarian version, you can stuff it with grilled peppers, or with spinach and ricotta. A great variation could be filling it with meat sauce and cheese or accompanying it with a smooth béchamel.
