Baked Potato Rösti

Baked Potato Rösti are a unique treat! Perfect to serve as snacks and appetizers, delicious both hot and cold, and they are flourless. To make them, you only need: potatoes, Parmesan, and oil. Also, try the zucchini and potato rösti version. The recipe is simple and quick, and you can naturally enrich them by adding spices of your choice such as: paprika, oregano, or add some lightly sautéed onion or bacon. In my version, I baked them, but you can also fry them.

Ingredients

  • 14 oz potatoes
  • 1/3 cup Parmesan
  • 3 tbsps extra virgin olive oil
  • to taste rosemary
  • 1 Grater

How to Make Baked Potato Rösti

  • Peel the potatoes, then blanch them for 6 minutes in salted boiling water.

  • Afterward, grate them with a large-hole grater.

  • Season them with salt, grated Parmesan, rosemary, and extra virgin olive oil.

  • Mix everything well to blend the flavors.

  • Line a baking sheet with parchment paper and form small heaps with the mixture, then flatten with the back of a spoon, and season with rosemary.

  • Bake in a ventilated oven at 392°F for about 15-20 minutes.

Baked Potato Rösti can be stored in the refrigerator in an airtight container until the next day. You can opt for variations, for example, cook them in an air fryer. Or add some fried onion or bacon.
