Ingredients
- 1.1 lbs pumpkin
- to taste spicy paprika
- 2 tbsps extra virgin olive oil
- 0.7 oz sliced almonds
- 0.35 oz pumpkin seeds
- to taste salt
- 1 sprig rosemary
Steps
First, cut the pumpkin in half, then scoop out the seeds with a spoon.
Slice the pumpkin into about 20 pieces, ensuring all slices are uniform for even cooking. Take a medium-sized baking sheet and oil it, then place the pumpkin wedges side by side.
Salt, add rosemary, garlic, and paprika. Sprinkle the pumpkin slices with pumpkin seeds and sliced almonds.
Bake in a static oven at 356°F for about 40 minutes or until the pumpkin is tender when pierced with a fork.
Storage
Baked Pumpkin with Paprika and Almonds can be stored in the refrigerator for one day in an airtight container. The next day, just reheat it in the microwave, oven, or in an air fryer.
