Baked Rice with Sausage is a super simple first course with guaranteed success! Baked rice is a great classic that the whole family loves, but it is also perfect for lunches with friends and family. You can prepare it well in advance and heat it up at the moment. A very versatile recipe, you can add mushrooms or other vegetables you like. I usually use Arborio or Carnaroli rice, then add tomato sauce and cheeses, usually scamorza or mozzarella. This last ingredient can change the consistency of the dish, for example, if you prefer a crunchy crust, I recommend a generous sprinkling of Parmesan; while for bolder flavors, pecorino or blue cheeses work well.

Ingredients

  • 2 cups Arborio rice
  • 1.5 cups tomato sauce
  • 1/2 onion
  • 1/3 cup Parmesan
  • 9 oz scamorza
  • 1 quart beef broth (or vegetable)
  • as needed breadcrumbs
  • as needed extra virgin olive oil
  • 7 oz sausage

How to prepare baked rice with sausage

  • Finely chop the onion, then sauté it with two tablespoons of oil in a large pan.

  • Add the crumbled sausage and sauté for 5 minutes, stirring often.

  • Add the rice and toast it for 2-3 minutes.

  • Then pour in the tomato sauce and a ladle of broth.

  • Add more as needed and salt. At the end of cooking, add oregano, give it a good stir, and remove from heat.

  • Add with diced scamorza and a sprinkle of Parmesan.

  • Pour the rice into a well-oiled and breadcrumb-coated baking dish.

  • Top with more cheese and bake in the oven at 350°F for about 20 minutes.

Storage and variations on baked rice with sausage

It can be stored in the refrigerator for up to two days, well preserved in an airtight container. You can add boiled eggs, meatballs, or grilled or fried eggplants and zucchinis.
