A summer dish that you’ll make in just a few minutes. Ricotta is a fantastic light and delicate cheese, and when baked this way, with zucchini and cherry tomatoes, it becomes even more appetizing! It can be served as either an appetizer or a vegetarian main dish. The recipe is really simple and now let’s see together how to prepare it.

Ingredients
- 9 oz ricotta
- 6 cherry tomatoes
- 1 zucchini
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste oregano
How to Make Baked Ricotta with Zucchini
Wash the cherry tomatoes and cut them in half or into quarters and set aside, then oil a baking dish and place the ricotta in it. Slice the zucchini into strips as well.
Add the cherry tomatoes and diced zucchini to the ricotta, season with salt, pepper, oregano, and oil.
Bake in a preheated oven at 375°F for about 30 minutes or until golden brown. Your baked ricotta with cherry tomatoes and zucchini is ready. Remove from the oven and serve hot!
Storage and Tips
Baked ricotta with cherry tomatoes can be stored in the fridge for up to two days. You can enrich the recipe by adding black olives and Tropea onion.
