Ingredients

  • 1/2 onion
  • to taste extra virgin olive oil
  • 1 cup g tomato puree
  • 1 lb g tortellini
  • 2 cups g mozzarella
  • 1/3 cup g grated Parmesan

How to prepare the Baked Tortellini Casserole

  • Chop the onion and sauté it in the pot with a dash of oil for a few minutes.

  • At this point, pour in the tomato puree, salt, and continue cooking for another 15-20 minutes.

  • In the meantime, cook the tortellini and then drain them into a bowl, pour the sauce, add the diced mozzarella, and grated Parmesan.

  • Pour everything into a baking dish, add more mozzarella and Parmesan. As a final step, bake at 375°F for about 15 minutes. Remove from the oven and serve hot and melted.

If you’ve made large portions and have leftovers, you can store this preparation in an airtight container in the refrigerator for up to two days. To reheat, just a quick warm-up in the microwave for 30/40 seconds at 850W will be enough.
