The dessert mainly consists of two different textures: the crispiness of the pastry and the softness of the cream. The origins of the name might come from the soft rugs found at the foot of the bed, called bedside rugs, and the dessert lends itself to many variations, for example, you can add syruped cherries to the cream, or you can add chocolate chips or replace the classic cream with pistachio cream. Ingredients
- 2 rolls puff pastry (rectangular)
- 1.7 cups milk
- 4.2 oz sugar
- 5.6 tbsp all-purpose flour
- 4 egg yolks
- to taste granulated sugar
- to taste vanilla powdered sugar (for decoration)
How to make the bedside cake
Beat the egg yolks with the sugar and vanilla flavor in a bowl. Add the flour and then the hot milk.
Then transfer to the heat and stir with a whisk until it thickens, cover with plastic wrap and let it cool.
Roll out the puff pastry and prick it with the tines of the fork and then sprinkle the surface with granulated sugar. Bake at 356°F for 15-20 minutes.
Fill the puff pastry with the custard.
Then take the second roll, place it over the cake, prick it with a fork, and sprinkle it with granulated sugar.
Bake in static mode at 374°F for 20 minutes or until golden. Remove from the oven and let it cool completely before dusting with powdered sugar.
Storage of the bedside cake
Although everything is baked in the oven, it is recommended to store the bedside cake in the refrigerator inside an airtight container.
