Ingredients

  • 1 1/3 lbs ground chicken
  • 1 3/4 tsp salt
  • 1 egg
  • 1/2 cup breadcrumbs
  • as needed milk
  • 1/4 cup Parmesan cheese
  • 2 eggs
  • as needed all-purpose flour
  • as needed breadcrumbs

How to Make Chicken Meatballs

  • In a large bowl, place the ground chicken, egg, salt, Parmesan, breadcrumbs, milk, and a grated lemon zest (optional). Mix well with your hands until all ingredients are combined.

  • Take a small portion of the meat and form many small meatballs, then roll the meatballs first in flour, then in beaten egg, and finally in breadcrumbs.

  • Place the meatballs in the air fryer and spray them with olive oil.

  • Cook in the air fryer for about 15 minutes. If your air fryer has a double heating element, you won’t need to turn them halfway through cooking; otherwise, turn them and spray with additional olive oil.

Chicken Meatball Storage and Variations

Baked meatballs can be stored in an airtight container until the next day. Since the meatballs are not fried, you can also serve them with sauces, such as Ketchup, Mayonnaise, or Barbecue sauce.

If you prefer, you can also cook the meatballs in a pan with a generous splash of olive oil, cooking over low heat for about 6 minutes. A small tip, don’t make them too big, otherwise they won’t cook well inside.
