Ingredients

  • 0.55 lbs chicken breast
  • 0.7 oz cornstarch
  • 2 tbsp extra virgin olive oil
  • soy sauce (to taste)
  • 1.5 cups Basmati rice
  • 2 cups water
  • 1 tbsp extra virgin olive oil
  • 1 tbsp rice vinegar
  • 0.35 oz pumpkin seeds

How to Make the Chicken Poke Bowl

Preparing the Chicken

Cut the chicken breast into strips (0.6×1.2-1.6 inches), then coat it with cornstarch. Put the extra virgin olive oil in the mixing bowl and heat: 2 min. 30 sec./248°F/ Speed 1.

Add the chicken strips, distributing them well inside the mixing bowl and cook: 15 min./248°F/ Speed 1, with the basket instead of the measuring cup. Check the cooking and, if necessary, continue: 3-5 min./248°F/ Speed 1, with the basket instead of the measuring cup. At the end, transfer the meat to a bowl and drizzle with soy sauce, then mix and set aside.

  • Place the basket on the mixing bowl lid and weigh the rice inside it. Rinse the rice well under cold running water until the water is clear. Then pour the water into the mixing bowl, add a drizzle of extra virgin olive oil, and add the rice.
    Set Cook Rice Mode. Once cooked, transfer the rice to a bowl, season with rice vinegar, and mix well with the spatula. At this point, plate the rice with the chicken. Garnish with pumpkin seeds and serve.

Storing the Chicken Poke Bowl

The Chicken Poke Bowl can be stored in the refrigerator until the next day, inside an airtight container.
