Ingredients
- 1.76 lbs chicken breast (8 thinly sliced pieces)
- 6 oz cooked ham (8 slices)
- to taste extra virgin olive oil
- to taste salt
- 3 oz smoked scamorza cheese
- to taste cornmeal
How to Make Chicken Skewers
Take the chicken breast slices, lightly pound them with a meat tenderizer if needed, then stuff them with a slice of ham and a slice of cheese.
At this point, roll them up. Repeat this step for all the chicken breast slices you have.
Once all the rolls are made, skewer them with two long skewers, spaced apart.
At this point, cut the already made rolls with a smooth blade knife, thus creating two finished skewers.
Transfer them onto a plate and sprinkle them with cornmeal on both sides.
In a skillet, pour a dash of olive oil, arrange the skewers, season with a pinch of salt, and cook them covered, making sure to turn them on all sides for more even cooking. Serve immediately hot and gooey.
Storage and Variations for Chicken Skewers
You can also bread them with some breadcrumbs mixed with parmesan, if you prefer, add some spices. Instead of cooked ham, you can use other cured meats such as prosciutto, speck, or bacon. For a touch of color, you can serve them with red and yellow cherry tomatoes. If you cook them in the oven or air fryer, use the static mode at 350°F for about 20 minutes.
