  • 1.1 lbs chicken
  • to taste paprika
  • to taste lemon
  • to taste salt
  • to taste extra virgin olive oil
  • 1 zucchini

How to make chicken skewers with zucchini

  • Start by cutting the zucchini, remove the ends and slice or dice it as you prefer.

  • Transfer them into a bowl along with the chicken cut into pieces, season it with spices: salt, paprika, lemon juice and mix. Marinate everything for about 30 minutes.

  • Start skewering alternately zucchini and chicken onto the sticks until all ingredients are used up.

  • Preheat the oven and cook for about 15-20 minutes at 356°F, turning them halfway through. Remove from oven and serve your skewers with another squeeze of lemon.

Storage and Tips for Chicken Skewers with Zucchini

You can prepare them a few hours in advance and keep them in the refrigerator well covered with plastic wrap to prevent them from absorbing other odors. You can experiment with other marinades such as: Soy sauce, honey, and ginger, or yogurt, garlic, mint and lemon juice. They are excellent accompanied by a nice salad or delicious baked carrots.
