The Christmas Semifreddo is a delicious spoon dessert that is very easy to prepare when you’re in the mood for something scenic yet simple. It doesn’t require oven baking, and it’s perfect to serve during the Christmas Holidays.
To make the recipe, I used a special ingredient: Classic Pavesini. I always keep a good stock in the pantry because I often use them to make tiramisu or other desserts like my paradise cake or the tiramisu roll.
The Christmas Semifreddo is made with a base of Pavesini and a filling of ricotta cream and cherries, all garnished with melted chocolate and chopped nuts. Ingredients
- 44 Classic Pavesini (4 snack packs)
- 14 oz ricotta
- 1 cup fresh whipping cream
- 2 sheets gelatin sheets
- 10.5 oz cherries
- 3.5 oz sugar
- 2 oz chocolate
- to taste chopped pistachios
How to make the Christmas Semifreddo
As the first step, soak the gelatin sheets in cold water.
Heat 1/4 cup of cream and dissolve the well-drained gelatin in it, then set aside.
In a bowl, mix the ricotta with the sugar until smooth. Then, add the whipped cream and gently fold it in, stirring from bottom to top to avoid deflating it.
Now, start assembling the dessert: line a loaf pan with cling film and place a layer of Classic Pavesini on the bottom. Pour in some of the ricotta cream, add some cherries, and finish with the remaining cream. Close with another layer of Pavesini, cover with cling film, and let it rest in the fridge for at least three hours.
After the resting time, transfer the semifreddo to a serving dish and decorate with melted chocolate and chopped pistachios.
Storage and tips for the Christmas Semifreddo
Like many types of semifreddo, for convenience, it can also be prepared the day before and stored in the fridge, decorating it only at the time of service with cherries.
